Who doesn’t love pumpkins? They are round and orange, and you can even cook with them! Although I’ve may have gone just a little pumpkin crazy at my house. Pumpkins are on the window sills, scattered around the house on tables, big ones are on the porch, and in the kitchen… pumpkin is cooking! Our family loves pumpkin bread. I got this recipe over 30 years ago when I was a newlywed and made it for my first Thanksgiving at my in-laws. ( They all thought I was so clever and such a good cook with this recipe!) I noticed the recipe recently at All Recipes called, Downeast Main Pumpkin Bread. I like to make it in small loaves and freeze them. The recipe makes several loaves and they make wonderful gifts to wrap up and tie with a ribbon. I would add a cup of pecans to this recipe and let it sit overnight or freeze it before serving it. If you can wait that long…
A few years ago I found this recipe for Pumpkin Butter at All Recipes. You use a large can of pumpkin, apple juice and a few spices. You cook it for 30 minutes, then put it in containers and refrigerate it. What I prefer to do is to can it in jars, so it doesn’t have to go in the fridge, and will last all winter long. I love this on whole wheat toast in the mornings. It tastes like a little bit of pumpkin pie on your buttered toast!
As I was out photographing all the pumpkin goodies I have been making, I noticed the expression on my scarecrow. I think there is a good possibility he thinks he is going to get something pumpkin for afternoon tea!
